Baked Chicken Tenders with Sweet Potato Fries

Ingredients
  

  • 1 pound chicken tenders
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs beaten
  • 2 large sweet potatoes cut into fries
  • 2 tablespoons olive oil

Instructions
 

  • Preheat oven to 400 degrees
  • In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper
  • Dip each chicken tender in the beaten eggs, then coat with the breadcrumb mixture. Place on a baking sheet lined with parchment paper
  • Toss the sweet potato fries with olive oil and spread them out on a separate baking sheet
  • Bake the chicken tenders and sweet potato fries for 20-25 minutes, turning once, until the chicken is cooked through, and the fries are crispy
  • Serve with ketchup or your favorite dipping sauce
