Meatloaf with Mashed Potatoes

Ingredients
  

Meatloaf Ingredients

  • 2 lbs ground beef
  • 1 med yellow onion, finely chopped
  • 2 large eggs
  • 3 garlic cloves, minced
  • 3 tbsp ketchup
  • 3 tbsp parsley, finely chopped
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 1 1/2 tsp salt
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground paprika

Meatloaf Sauce Ingredients

  • 3/4 cup ketchup
  • 1 1/2 tsp white vinegar
  • 2 1/2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt

Mashed Potatoes Side

  • 2 24 oz Bob Evans original mashed potatoes

Instructions
 

  • Line a 9×5" loaf pan with parchment paper and preheat oven to 375 degrees Fahrenheit
  • In a large bow, mix all meatloaf ingredients. Mix well
  • Add meat to loaf pan and press down with a wooden spoon to evenly distribute
  • Bake meatloaf for 40 minutes
  • In a small bowl, mix all of the sauce ingredients and set aside
  • After the 40 minutes are up, pour the sauce over the meatloaf and ensure it is evenly distributed
  • Add back into the oven for another 20 minutes or until internal temperature reads 160 degrees Fahrenheit
  • Cook mashed potatoes per packaging instructions
  • Serve meatloaf with mashed potatoes and enjoy!
