Chicken and Avocado Roll-Ups
Ingredients
- 4 whole wheat tortillas
- 2 cups cooked shredded chicken
- 1 ripe avocado mashed
- 1/2 cup shredded cheese cheddar or mozzarella
- 1/2 cup finely chopped tomatoes
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a small bowl, mix the mashed avocado with lime juice, salt, and pepper.
- Spread a thin layer of the avocado mixture over each tortilla.
- Top with shredded chicken, cheese, and chopped tomatoes.
- Add a small dollop of Greek yogurt on top of the fillings.
- Roll up each tortilla tightly and slice into bite-sized pieces.
