Homemade Mac-and-Cheese with Broccoli
Cheesy deliciousness, filled with broccoli nutrients your kid will love
Ingredients
- 8 oz medium pasta shells
- 6 oz broccoli florets
Cheese Sauce
- 2 tbsp unsalted butter
- 2 tbsp flour
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1 cup whole milk
- 1/4 cup greek yogurt
- 2 cups shredded cheddar cheese
Instructions
- Cook pasta shells to al dente per packaging instructions. Drain once cooked
- In a separate pot, cook broccoli to desired softness per packaging instructions
- Mix together flour, salt, and garlic powder. Set aside
- Melt the butter in a medium saucepan over low-medium heat
- Once butter is melted, add in flour mixture and whisk until well blended. Cook until mixture starts browning, about 1 minute
- Add in greek yogurt and whisk until smooth. Cook on medium-high heat until mixture is thickened, about 3-4 minutes
- Reduce heat to low and add in shredded cheese. Whisk until cheese is melted and smooth
- Mix pasta, broccoli, and cheese sauce together until sauce is evenly distributed. Serve warm and enjoy!
