Homemade Mac-and-Cheese with Broccoli

Ingredients
  

  • 8 oz medium pasta shells
  • 6 oz broccoli florets

Cheese Sauce

  • 2 tbsp unsalted butter
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1 cup whole milk
  • 1/4 cup greek yogurt
  • 2 cups shredded cheddar cheese

Instructions
 

  • Cook pasta shells to al dente per packaging instructions. Drain once cooked
  • In a separate pot, cook broccoli to desired softness per packaging instructions
  • Mix together flour, salt, and garlic powder. Set aside
  • Melt the butter in a medium saucepan over low-medium heat
  • Once butter is melted, add in flour mixture and whisk until well blended. Cook until mixture starts browning, about 1 minute
  • Add in greek yogurt and whisk until smooth. Cook on medium-high heat until mixture is thickened, about 3-4 minutes
  • Reduce heat to low and add in shredded cheese. Whisk until cheese is melted and smooth
  • Mix pasta, broccoli, and cheese sauce together until sauce is evenly distributed. Serve warm and enjoy!
