Mini Veggie Quesadillas

Ingredients
  

  • 4 small whole wheat tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely chopped bell peppers red, yellow, green
  • 1/2 cup corn kernels canned or frozen
  • 1/2 cup black beans rinsed and drained
  • 1 tablespoon olive oil

Instructions
 

  • Heat a large skillet over medium heat and add 1 teaspoon of olive oil.
  • Place one tortilla in the skillet and sprinkle half of it with a small amount of cheese.
  • Add a layer of bell peppers, corn, and black beans on top of the cheese.
  • Sprinkle more cheese over the vegetables, then fold the tortilla in half.
  • Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  • Remove from the skillet, let it cool slightly, and cut into small wedges.
  • Repeat with the remaining tortillas and filling ingredients.
