Mini Veggie Quesadillas
Ingredients
- 4 small whole wheat tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup finely chopped bell peppers red, yellow, green
- 1/2 cup corn kernels canned or frozen
- 1/2 cup black beans rinsed and drained
- 1 tablespoon olive oil
Instructions
- Heat a large skillet over medium heat and add 1 teaspoon of olive oil.
- Place one tortilla in the skillet and sprinkle half of it with a small amount of cheese.
- Add a layer of bell peppers, corn, and black beans on top of the cheese.
- Sprinkle more cheese over the vegetables, then fold the tortilla in half.
- Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
- Remove from the skillet, let it cool slightly, and cut into small wedges.
- Repeat with the remaining tortillas and filling ingredients.
