Red Pepper Quesadillas
Quick and delicious lunch or snack for the kiddos
Ingredients
- Two 8 inch flour tortillas
- 1/2 cup shredded Mexican blend cheese
- 2 slices jarred roasted red peppers, halved
- 1 tbsp unsalted butter
- 1/4 cup sour cream
Instructions
- Quarter tortillas prior to assembling. Spread cheese and strips of roasted red peppers on the bottom portion of the tortillas, then fold top over to cover
- Melt the butter in a large nonstick skillet over medium-high heat. Arrange tortillas in the skillet and cook until golden brown, about 3 minutes per side
- Serve with sour cream and enjoy!
