Red Pepper Quesadillas

Ingredients
  

  • Two 8 inch flour tortillas
  • 1/2 cup shredded Mexican blend cheese
  • 2 slices jarred roasted red peppers, halved
  • 1 tbsp unsalted butter
  • 1/4 cup sour cream

Instructions
 

  • Quarter tortillas prior to assembling. Spread cheese and strips of roasted red peppers on the bottom portion of the tortillas, then fold top over to cover
  • Melt the butter in a large nonstick skillet over medium-high heat. Arrange tortillas in the skillet and cook until golden brown, about 3 minutes per side
  • Serve with sour cream and enjoy!
