Veggie and Cheese Muffins

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix flours, baking powder, baking soda, and salt.
  • Stir in zucchini, carrot, and cheese.
  • In another bowl, whisk milk, oil, and eggs.
  • Combine wet and dry ingredients until just mixed.
  • Spoon batter into a greased muffin tin.
  • Bake for 20 minutes or until a toothpick comes out clean.
  • Serve warm or at room temperature.
