Veggie and Cheese Muffins
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup grated zucchini
- 1 cup grated carrot
- 1 cup shredded cheese cheddar or mozzarella
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix flours, baking powder, baking soda, and salt.
- Stir in zucchini, carrot, and cheese.
- In another bowl, whisk milk, oil, and eggs.
- Combine wet and dry ingredients until just mixed.
- Spoon batter into a greased muffin tin.
- Bake for 20 minutes or until a toothpick comes out clean.
- Serve warm or at room temperature.
